Tonight is the Super Bowl. I have no allegiance to either team so I’m rooting for Bruno Mars.
And while we don’t have the Patriots, we do have snacks.
This dip is one of my favorites. It’s a Whole Foods knock-off. I used to buy it from their prepared foods department and serve it at parties and everyone loved it. Then, devastatingly, without notice, Whole Foods stopped carrying it for a while. Eventually they brought it back. This may have had something to do with the multiple letters I sent to my State representative urging him to get more involved with the dip issues effecting his constituents. At one point it occurred to me to read the short list of ingredients on the label and I realized how simple the whole thing was. With a little experimenting I was able to recreate it at home. It’s deliciously salty from the feta and the Peppadew peppers give it just a little kick.
Honestly, this is so good, ridiculously easy and perfect for a Superbowl party. Break out your food processor and voilà. Randomly, if you have any left tomorrow morning (which you probably won’t) a dollop of this is fantastic with scrambled eggs. It’s also really nice as a spread on sandwiches or wraps.
Whipped Feta Dip
Break the feta into smaller pieces, place in food processor and pulse several times. Once cheese is fully-crumbled, add peppers. Blend until fully-combined. Add the Neufchatel and mix until combined. Add the sour cream. Blend until ingredients are fully-incorporated and mixture is smooth. Season with black pepper. Chill.
Serve with crudité or chips and pretzels.
