I have procrastinated making this composed checkerboard salad for quite a while. The precise cubing really intimated me. Well documented, crafts are not my strong-suit. But, we are rolling in the deep of watermelon season so this weekend seemed a good a time as any.
This dish would be perfect for a late-Summer brunch.
Watermelon, Avocado & Feta Salad
1 cup cubed watermelon
1/2 cup cubed feta
1 avocado, cubed
1 small red onion, sliced paper thin
1/4 cup microgreens
Extra virgin olive oil
Fresh ground black pepper
Cut all ingredients to the same sized cube. Arrange salad ingredients in a checkerboard formation. Top with red onion slices and microgreens. Season with salt and pepper and drizzle with olive oil.
