This past weekend I visited my family in Portland, ME and had lunch with my Mom at Slab. The Ceci alla Siciliana, otherwise known as Sicilian hummus was made with smashed chickpeas, orange, sage and red pepper flakes. It was served with warm olive oil soaked bread and it was incredible. I’d never had hummus prepared this way, but now I can’t wait to try making it at home.
The panzanella with sheeps milk feta, black olives and orange dill dressing was beautiful and delicious. I’d consider this meal a celebration of gluten.
If you’re looking for more than a nibble, go grab a hearty, 1-pound slab of Sicilian-style cheese pizza and a glass of fruity Prosecco.
