This is the easiest dish you’ll ever prepare, but it’s very pretty and the colors are festive and perfect for the holidays. This little snack requires no baking so you can simply assemble and serve. It’s also super easy to pull together in a friend’s kitchen if you’ve offered to bring an app for a dinner party or potluck. Goat cheese is really the star here, so choose one that you like – I prefer something delicate and mild, with a bit of tang. You’ll also want a subtle honey – nothing too robust or overpowering. I really like this with Prosecco – the bubbles balance-out the creaminess of the goat cheese. This is delicious at brunch served with toasted baguette slices or great in the Summer with a cold glass of sparkling Rosé.
Goat Cheese with Pomegranates & Chives

11 oz goat cheese, room temperature
2 tbsp pomegranate seeds
1 tbsp chives
Drizzle of honey
Sprinkle of coarse sea salt (I prefer Maldon)
Use an offset spatula to spread the goat cheese over a large plate. Scatter with the pomegranate seeds and chives. Drizzle with honey and sprinkle with salt when ready to serve. I love this with these Apricot, Fig & Lemon Rainforest Crisps.
