I’ve mentioned this before, but I was always far more tempted by chips & dip or cheese & crackers when I was a kid than I ever was by candy or sweets. In fact, the very first snack I remember making was feta stuffed olives. I couldn’t have been more than seven or eigh-years-old and my parents were hosting a dinner party for some neighborhood friends. I was with my Mom in the kitchen, helping her prepare a salad. I found myself with a bowl of pitted Kalamata olives and a block of feta cheese, one ingredient more deliciously salty than the next. The thought occurred to me the two would really shine if combined. I recall proudly showing my mother and she encouraged me to make more. I did as she suggested and she served them to her guests later that evening. My Mom gave me credit and everyone was very complimentary, with the possible exception of my Dad, who while always extremely supportive of my culinary endeavors, is ardently anti-olive.
When I first considered launching this blog, I thought feta stuffed olives would be a fun, cheeky inaugural post. Well, my first post ended up being about grilled brunch – best laid plans. I’ve incorporated a couple extra ingredients and a bit more flavor to the original ‘recipe’, but these are obviously not difficult to prepare since they were the brainchild of well, a child. You can make them ahead of time, keep them chilled and just let them come to room temp before you serve. Also, if you have extra cheese, try stuffing a few peppadew peppers.
Feta & Blue Cheese Stuffed Olives
2 oz feta cheese, room temp and crumbled
2 oz blue cheese, room temp and crumbled
2 oz cream cheese, room temp
1 tsp fresh parsley
1 tsp fresh chives
1/2 tsp freshly cracked black pepper
40 pitted olives, your favorite variety
These are delicious with a martini. They’re delicious in a martini.
